Beets (and the beat goes on)

I know that beets are not one of the most loved foods, although I actually like them when they are cold on top of a salad.   Beets are considered "nature's multivitamin." Beets contain the greatest range of nutrients ounce for ounce than any other fruit or vegetable. They help protect against heart disease, birth defects and certain  cancers, especially colon cancer.  Also the antioxidants that give beets their deep red color also fight free radicals that lead to aging.  Beets have also been shown to lower blood pressure and the risk of heart disease.  And beets help cleanse the body of harmful chemicals in processed foods.
