Popcorn - a very healthy snack food!

SAN DIEGO, March 28 (UPI) -- Popcorn has more antioxidant polyphenols than fruits and vegetables, U.S. researchers said.

Chemistry professor Joe Vinson of the University of Scranton and Michael G. Coco, an undergraduate chemistry major, said the polyphenols are more concentrated in popcorn, which averages only about 4 percent water, while polyphenols are diluted in the 90 percent water that makes up many fruits and vegetables.

However, Vinson was quick to point out popcorn cannot replace fresh fruits and vegetables in a healthy diet because fruits and vegetables contain vitamins and other nutrients that are critical for good health that are missing from popcorn. But it can make a good snack if air-popped, Vinson added.

The study found popcorn contains as much as 300 milligrams of polyphenols per serving, compared to 114 milligrams in a serving of sweet corn and 160 milligrams for all fruits per serving.

In addition, one serving of popcorn would provide up to 300 milligrams a serving of polyphenols a day per U.S. adult versus fruit, which provides 255 milligrams per day of polyphenols and vegetables provide 218 milligrams per day.

The hulls of the popcorn contain the highest concentration of polyphenols and fiber, researchers said.

The findings were published in the 243rd National Meeting & Exposition of the American Chemical Society in San Diego.

  1. Hi Elyse, My concern with corn is that most of it is GMO. This is the reason I still prefer my fruits, veggies and smoothies for snacks. I also love my new version of hot chocolate that is under 100 cal the cap (1 cup almond milk (eat it up to your convenience, + 1 tbls cacao powder from Trader joe, and some chocolate stevia. Sometimes I add some cinamon or I use coco milk instead of almond milk. I love it in front of a fire with a good book or a romantic movie.
Your posts are always a breeze of fresh air, thanks.

    1. Hi Evelyne,1 You bring up a very good point. After I read your comment I did a little research on GMO and found that it is found in more than just corn. This really scared me! Possibly melons, beets and soy, etc. (I eat a lot of beets) How do we know when we go to the grocery store just what we are buying. I read that possibly everyone has been exposed to GMO. Not a good thing. Just everything is being tampered with. I think I have to trade my soy milk in for almond milk. Your hot cocoa sounds amazing! And you mentioned one of my favorite stores. There are so many foods that I love from Trader Joes. With your permission I would love to post your hot cocoa recipe. Thank you for your informative comment and thank you for reading my blog! elyse
